Cheesy Cauliflower Soup

As I promised, it's day 2 of my week of Weight Watchers friendly recipes! Here's a modified version of my mom's soup... Mom, don't read. It's not quite your soup :\

8 cups water (will boil down to about 6)
2-4 Tbsp powdered chicken base
(used 3 for my points calculation but it depends on how weak or strong you like your chicken flavor)
1 large head cauliflower
2 cups chopped carrots
1 cup chopped celery (optional, I leave it out)
any vegetables you like
8 oz Velveeta cheese (1/4 block)
salt and pepper to taste
  1. Boil cauliflower and carrots in 8 cups water until tender.
  2. Add Velveeta cheese; cubed to melt quickly. Stir constantly until cheese is melted.
  3. Salt and pepper to taste.
This recipe is SO versatile. Add whatever veggies you like or as much of them as you like. If you like a chunkier soup, more cauliflower, potatoes, or even cubes of ham work great. But you'll have to figure out the points for it all of course!

Makes six 1 cup servings at 4 points each; 5 points if you choose to use 2 heads of cauliflower for extra chunky! Pair this with a low point sandwich or veggie salad for a filling dinner.

I may have to subscribe to the weight watchers site just for this recipe calculator! I wouldn't have counted the extra head of cauliflower as another point as the little book says it's zero points. Though yes, I realize it's only zero points in that size of a serving they list it for in the book.

Could you use chicken broth? Those other things have a lot of salt.

Anita, yes. It's not the SAME flavor, but I've done it before. Jason and I are salt addicts though. I suppose, you could also use low sodium soup base too :)

Hope, WW Online is so worth it! There are also mobile apps for phones and ipods to track your meals away from the computer. You can only track food items you have in your online favorites (you can add as many as you like) but there's the complete restaurant guide too. WORTH IT!

I don't have internet on my phone, I can't justify the cost of that when I'm almost always within reach of a computer should I need one. It's hard to justify the $17 a month cost for the site when I'm not sure how much of it I would use. I'm thinking I will try it for one month as my birthday gift to myself though. :)

Or not on the website thing. I didn't realize there was an almost $50 charge just to get an account. Yikes! I could just pay you a dollar a recipe to help me figure out stuff instead!

The $50 is for sign up and 3 months worth. After 3 months, you go to $17 a month. It was worth it for me because I cook so often and it saves me from doing a TON of math (which I'm bad at because face it, our school failed us in the math department LOL).

Let me know what you need me to do in the recipe builder and I will. No payment required!! Do you realize that you just dropped of a giant bag of potatoes, a huge spiral ham, some Christmas cards, and recently gave me my GTXpress?? Seriously. I'll figure out whatever points you need me to figure out free of charge! :)

I do see they have a free one week trial for the website. I may use that and then ask mom for the money for the three month subscription for my birthday.

And I will definitely email you or comment here with any questions I've got.
